Sourdough rye bread dough rising. Bread may rise on the countertop if the temperature is 80 - 95 degrees Farenheit, as that is the ideal rising range to achieve the best structure, texture and flavor from the dough. Cover the bowl with plastic wrap that has been sprayed with a cooking spray to prevent sticking.
