Sourdough rye dough rising in an oven which has a "bread proof" setting. Ovens without a "bread proof" cycle will likely be too warm, as 80 - 95 degrees Farenheit is the ideas rising range to achieve the best structure, texture and flavor from the dough. The bowl is covered with plastic wrap to prevent sticking.
